For generations, Robusta has been treated as a commodity. We treat it as a craft. From cherry selection to extended fermentation, every step of our process is engineered to reveal what this varietal has always been capable of, when it is finally given the attention it deserves.

Each Oro Verde lot is processed by hand at the farm and finished to specialty grade, designed to give roasters genuinely new material to work with.

Honey-processed Robusta

De-pulped with the mucilage intact, then dried under continuous sensor monitoring. A bright, chocolate-forward cup over a creamy base, the most acid-forward of our three lots.

Extended fermentation · cold-dried

Our flagship lot. Controlled fermentation at 16°C to a pH of 4.3–4.5, then slow cold-drying. A creamy, low-bitter, high-sweet cup with a fruited chocolate character, our highest-scoring coffee.

Toabré, Coclé, Panama's quiet coffee province.

A microclimate written for Robusta.

Our 26-hectare farm sits at 400 meters in Toabré, in the district of Penonomé, near La Pintada, in the province of Coclé, a region whose coffee legacy dates to the 18th century and whose conditions are uniquely suited to producing high-character Robusta.

Shaded canopies, volcanic soils, consistent humidity, and a daily temperature curve that allows extended cherry maturation give us a baseline most Robusta-producing regions cannot.

A LoRaWAN sensor network across the farm monitors microclimate, soil, and canopy in real time, closing the loop between traditional craft and measurable consistency.

Microclimate Sensors

Distributed LoRaWAN nodes track temperature, humidity, leaf wetness, and solar radiation across the canopy, minute by minute.

Cherry-Ripening Models

Data informs harvest windows lot-by-lot, so cherries are picked at the precise sugar peak, not on a calendar.

Fermentation Control

Continuous pH, temperature, and time monitoring during fermentation lets us cut every tank at the same target, reproducible profiles, not happy accidents.

Full Lot Traceability

Every kilo of green is tied to its parcel, harvest date, fermentation run, and drying curve, accessible to every buyer.
